The Ukrainian cabbage market is currently experiencing a significant increase in the price of this vegetable, which is important for the borscht set. According to analysts from the EastFruit project, there is a limited amount of high-quality white cabbage on the market, which contributes to the rapid increase in prices.
If last week farmers sold cabbage at a price of 22 UAH per kilogram, today prices fluctuate within 25–35 UAH per kilogram. This means that the cost of cabbage has increased by 16% compared to the end of the last working week. Taking into account such changes, prices for white cabbage in Ukraine are on average three times higher compared to the same period last year.
There is some instability in supplies on the market, as many farms refrain from sales, hoping for a further increase in price. This is confirmed by the limited supply, which leads to increased demand. Moreover, wholesale companies are actively purchasing cabbage, ready to increase purchase prices depending on market conditions.
Forecasts of market participants indicate that prices may continue to grow. This is due to a decrease in the production of white cabbage in Ukraine, as well as a noticeable reduction in the share of products subject to long-term storage. Accordingly, most of the harvest will be sold in the coming months, which also affects the formation of price trends.
In conditions where cabbage is becoming an increasingly expensive product, the cost of other vegetables in the borscht set is also not standing still. Therefore, consumers should be prepared for an increase in the cost of preparing traditional dishes, such as borscht, which is in significant demand among Ukrainians.
The increase in cabbage prices is an important signal for producers and consumers. The issue of price stability for other important vegetables and the effectiveness of agricultural practices that can help stabilize the market and ensure the availability of basic products for the population in the coming months remains important.
